Ingredients:
- 1 1/2 cups of all-purpose flour
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 cup of granulated sugar
- 2 large eggs
- 1/3 cup of vegetable oil
- 1/4 cup of fresh lemon juice
- 1 tablespoon of lemon zest
- 1/2 cup of milk
- 1/2 teaspoon of vanilla extract
Lemon Glaze:
- 1 cup of confectioners’ sugar
- 2 tablespoons of fresh lemon juice
- 1 tablespoon of lemon zest
Instructions:
- Preheat your oven to 350°F (180°C) and prepare a 9×5-inch loaf pan by greasing and flouring it.
- In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
- In a separate large mixing bowl, beat together the granulated sugar, eggs, vegetable oil, lemon juice, and lemon zest until the mixture is smooth and creamy.
- Gradually add the dry ingredients to the wet ingredients in two additions, alternating with the milk and vanilla extract. Mix until just combined, being careful not to overmix.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Tap the pan gently on the counter to remove any air bubbles.
- Bake the loaf for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- While the loaf is cooling, prepare the lemon glaze by whisking together the confectioners’ sugar, lemon juice, and lemon zest until smooth.
- Once the loaf has cooled, drizzle the lemon glaze over the top, allowing it to drip down the sides.
- Serve the lemon loaf at room temperature, sliced and enjoyed by all!
