Ingredients:

  • 1 1/2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1/3 cup of vegetable oil
  • 1/4 cup of fresh lemon juice
  • 1 tablespoon of lemon zest
  • 1/2 cup of milk
  • 1/2 teaspoon of vanilla extract

Lemon Glaze:

  • 1 cup of confectioners’ sugar
  • 2 tablespoons of fresh lemon juice
  • 1 tablespoon of lemon zest

Instructions:

  1. Preheat your oven to 350°F (180°C) and prepare a 9×5-inch loaf pan by greasing and flouring it.
  2. In a medium mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  3. In a separate large mixing bowl, beat together the granulated sugar, eggs, vegetable oil, lemon juice, and lemon zest until the mixture is smooth and creamy.
  4. Gradually add the dry ingredients to the wet ingredients in two additions, alternating with the milk and vanilla extract. Mix until just combined, being careful not to overmix.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Tap the pan gently on the counter to remove any air bubbles.
  6. Bake the loaf for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. While the loaf is cooling, prepare the lemon glaze by whisking together the confectioners’ sugar, lemon juice, and lemon zest until smooth.
  9. Once the loaf has cooled, drizzle the lemon glaze over the top, allowing it to drip down the sides.
  10. Serve the lemon loaf at room temperature, sliced and enjoyed by all!
