Ingredients:

  • 1.5 lb raw shrimp, peeled, deveined, tails off (large – about 15-20 count per pound)
  • 2 tablespoons olive oil
  • ½ teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes
  • ¼ teaspoon salt (to taste)
  • ¼ teaspoon freshly ground black pepper
  • 5 cloves garlic, minced
  • ¼ cup freshly squeezed lemon juice (from 1 large lemon)
  • ½ cup dry white wine
  • 3 tablespoons salted butter
  • 3 tablespoons capers
  • 3 tablespoons lemon zest
  • ½ cup fresh basil, chopped

Instructions:

  1. Prepare the Shrimp:
    • Heat a large skillet over medium heat. Add olive oil.
    • Place the shrimp in the skillet without overcrowding. Sprinkle with Italian seasoning, red pepper flakes, salt, and pepper.
    • Cook the shrimp for about 3-4 minutes, flipping once or twice, until pink. Avoid overcooking. Remove shrimp from the skillet.
  2. Make the Sauce:
    • In the same skillet, add minced garlic, lemon juice, and white wine. Deglaze the pan.
    • Reduce heat and cook for 2-3 minutes until the sauce slightly reduces and the garlic softens.
    • Remove from heat and fold in butter until melted.
  3. Assembly:
    • Return the cooked shrimp to the skillet with the lemon garlic butter sauce. Add 2 tablespoons of capers and stir to reheat over low heat.
    • When serving, top with the remaining capers, chopped fresh basil, and lemon zest.
    • Optionally, squeeze a little lemon juice over the shrimp before serving.
