Ingredients:

  • 1 ¾ cups of all-purpose flour
  • 1 cup of granulated sugar
  • ½ cup of unsweetened cocoa powder
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda
  • ½ teaspoon of salt
  • 1 cup of buttermilk
  • ½ cup of vegetable oil
  • 2 large eggs
  • 2 teaspoons of vanilla extract
  • 1 cup of chocolate chips (semi-sweet or dark)
  • Optional: chopped nuts or chocolate chunks for added texture

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large bowl, thoroughly whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until uniformly combined.
  3. In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until the mixture is smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Avoid overmixing; a few lumps are acceptable.
  5. Stir in the chocolate chips (and nuts or chocolate chunks if desired).
  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  7. Bake in the preheated oven for approximately 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean or with only a few moist crumbs.
  8. Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
