Exquisite Lemon Cake Recipe

Ingredients:

  • 3 cups (360g/12.60z) of all-purpose flour
  • 1 (3.4 oz) package of instant lemon pudding
  • ½ tsp of salt
  • ¼ tsp of baking soda
  • 1½ cup (340grams/12.0z) of softened butter
  • 2¾ cups (350grams/12.30z) of granulated sugar
  • 6 large eggs
  • 2 tsp of pure vanilla extract
  • 1 (8 oz) container of sour cream
  • 2 Tbsp of freshly grated lemon zest

For the Glaze:

  • 1½ cup (170grams/60z) of powdered sugar
  • 2 Tbsp of freshly squeezed lemon juice (adjust for desired consistency)
  • 1 Tbsp of melted butter

Method:

  1. Preheat your oven to 325°F. Prepare a tube pan by greasing it with butter and lightly flouring it. Set aside.
  2. In a bowl, sift together the all-purpose flour, lemon pudding mix, salt, and baking soda. Set aside.
  3. In a separate mixing bowl, cream together the softened butter, granulated sugar, and vanilla extract until light and pale yellow, about 2-3 minutes.
  4. Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.
  5. Reduce the mixer speed and gradually add the sifted dry ingredients alternately with the sour cream. Mix until fully combined. Gently fold in the fresh lemon zest.
  6. Pour the batter into the prepared tube pan and spread it evenly.
  7. Bake for 1 hour 20 minutes to 1 hour 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan on a wire rack for 15 minutes. Then, carefully remove the outer ring of the pan and let the cake cool completely.
  9. For the glaze, mix together the powdered sugar, lemon juice, and melted butter until smooth. Drizzle the glaze over the cooled cake.
