  • 4 hard-boiled eggs, chopped
  • 1/2 cup finely chopped celery
  • 1/4 cup finely chopped red onion

Directions:

  1. Begin by boiling the diced potatoes in a large pot until they are tender, approximately 10-15 minutes. Drain and allow them to cool slightly.
