Ingredients:
- 2 pounds Yukon Gold potatoes, peeled and diced
- 1 cup mayonnaise
- 1/4 cup yellow mustard
- 1/4 cup sweet pickle relish
- 4 hard-boiled eggs, chopped
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped red onion
- Salt and pepper to taste
- Paprika for garnish
- Fresh parsley, chopped for garnish
Directions:
- Begin by boiling the diced potatoes in a large pot until they are tender, approximately 10-15 minutes. Drain and allow them to cool slightly.
- In a spacious mixing bowl, combine the mayonnaise, mustard, and sweet pickle relish.
- Add the cooled potatoes to the mixture, along with the chopped eggs, celery, and red onion. Gently toss until all ingredients are evenly coated.
- Season the salad with salt and pepper according to your taste preferences.
