Ingredients:

  • Nonstick cooking spray (for greasing)
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp kosher salt
  • 2 tsp cinnamon
  • ¼ cup unsalted butter
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ cup no-sugar-added applesauce
  • 1 ½ cups peeled and finely diced Honeycrisp apples (about 2 medium apples)

Glaze:

  • 2 cups powdered sugar
  • ⅓ cup plus 2 TBSP apple cider or apple juice

Instructions:

  1. Prepare the Apple Fritters:
    • Preheat your oven to 400°F (200°C) and generously spray a baking sheet with cooking spray.
    • In a medium bowl, whisk together the all-purpose flour, baking powder, kosher salt, and cinnamon until thoroughly combined.
    • In a large bowl, mix the melted butter with granulated sugar until well incorporated. Then, add the egg and whisk until combined. Stir in the vanilla extract and applesauce until smooth.
    • Gradually add the flour mixture to the wet ingredients, stirring until fully combined. Gently fold in the diced Honeycrisp apples until evenly distributed throughout the batter.
    • Using a tablespoon, scoop mounds of batter onto the prepared baking sheet, leaving a few inches of space between each mound.
    • Bake the fritters for 10 minutes until golden brown. Once baked, remove them from the oven and switch on the broiler to high.
  2. Prepare the Glaze:
    • In a small bowl, whisk together the powdered sugar and apple cider (or apple juice) until you achieve a thin glaze consistency.
  3. Glaze and Broil the Fritters:
    • Brush a generous amount of glaze over each fritter, allowing it to drip down the sides.
    • Return the glazed fritters to the oven and broil for 2-4 minutes, or until the glaze begins to caramelize on top. Rotate the baking sheet every minute to ensure even caramelization.
    • Keep a close eye on the fritters to prevent them from burning. Once adequately caramelized, remove them from the oven.
  4. Final Touch:
    • Brush the remaining glaze over the broiled fritters, ensuring even coverage.
    • Allow the fritters to cool and the glaze to harden on the baking sheet for approximately 15 minutes.
