Hungarian Jam Tarts Recipe
These Hungarian jam tarts were a cherished treat from my childhood. My mom would often fill her vintage biscuit tin with these delightful pastries, and they would quickly disappear!
Ingredients:
- 500g butter
- 5 1/2 cups flour
- 1 cup sugar
- 6 teaspoons baking powder
- 1 teaspoon salt
- 2 teaspoons vanilla essence
- 6 eggs
- Jam of your choice (for authenticity, use All Gold smooth apricot jam, just as my mom did)
Method:
- Preheat your oven to 180°C (350°F).
- Cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla essence.
- Sift the dry ingredients (flour, baking powder, and salt) into the creamed mixture, and blend until combined. Using your hands can make this process easier.
- Divide the dough into two portions. Place one quarter of the dough in the freezer for 30 minutes.
- Press the remaining dough into a Swiss roll baking tray. Spread an even layer of apricot jam over the dough.
- Grate the chilled dough from the freezer over the jam.
- Bake in the preheated oven for 20 to 25 minutes, or until golden brown.
- Allow to cool, then cut into squares.
Note:
This recipe yields a large tart. You can halve the ingredients if you prefer a smaller batch. Enjoy these delicious, jammy squares!
