  • 3 cups water
  • 2 cups sugar (for coating)
  • Oil (for greasing)
  • 9 cups granulated sugar
  • 1 teaspoon flavoring extract (your choice)
  • 6 envelopes unflavored gelatin powder (approximately 1.5 ounces total)
  • Food coloring (to taste)

Instructions:

  1. Prepare the Gelatin: In a saucepan, combine the water and unflavored gelatin powder. Let it hydrate for a few minutes.
  2. Dissolve the Gelatin: Heat the mixture over medium heat, stirring constantly until the gelatin is fully dissolved. Avoid bringing it to a full boil.
  3. Incorporate the Sugar: Gradually add the granulated sugar to the dissolved gelatin. Continue to stir constantly until the mixture begins to boil.
  4. Add Flavor and Color: Once the mixture reaches a boil, remove it from the heat. Stir in your chosen flavoring extract and a few drops of food coloring. Ensure the color complements the flavor (e.g., red for strawberry, orange for orange).
  5. Set the Mixture: Grease a mold lightly with oil and pour the gelatin mixture into it. Allow it to set at room temperature for approximately 12 hours.
  6. Finishing Touches: After the mixture has set, carefully remove it from the mold. Cut it into squares or any desired shape. Roll the jelly beans in crystal sugar to coat them thoroughly.
