Ingredients

For the batter:

  • 2 eggs
  • 125 g sugar
  • 100 g butter
  • 100 g flour
  • 1 teaspoon baking powder

For the filling:

  • 750 g apples (preferably Cox Orange)
  • 2 packs custard powder
  • 0.5 liter apple juice (and a bit extra to stew the apples)

For the topping:

  • 3 eggs
  • 1 cup sour cream
  • 5 tablespoons sugar

Instructions

1. Prepare the Batter:

In a mixing bowl, combine the eggs, sugar, butter, flour, and baking powder. Mix until the batter is smooth and well-combined. Pour the batter into a springform pan and bake in a preheated oven at 180°C (350°F) for about 20 minutes.

2. Prepare the Filling:

While the batter is baking, core and peel the apples. Stew the apples in a small amount of apple juice until they are tender. Once stewed, drain the apples using a sieve. In a separate saucepan, bring 0.5 liter of apple juice to a boil. Stir in the custard powder according to the package instructions, substituting apple juice for the usual milk or water. Fold the stewed apples into the custard mixture and bring it to a boil again until the consistency is thick and sticky.

3. Assemble the Pie:

Remove the partially baked crust from the oven and pour the apple custard mixture over it, spreading it evenly. Return the pan to the oven and bake for an additional 5 minutes.

4. Prepare the Topping:

Separate the eggs. Beat the egg whites until stiff peaks form. In a separate bowl, mix the egg yolks with the sour cream and sugar until smooth. Gently fold the beaten egg whites into the sour cream mixture.

5. Finish Baking:

Spread the topping evenly over the partially baked pie. Continue baking until the topping turns a golden yellow color.

6. Cool and Serve:

After baking, let the pie rest in the oven with the door slightly open for a few minutes. Allow the pie to cool completely before removing it from the springform pan. Serve and enjoy your fluffy apple pie!
