Exquisite Shrimp Scampi Recipe

Ingredients:
- 1.5 lb raw shrimp, peeled, deveined, tails off (large – about 15-20 count per pound)
- 2 tablespoons olive oil
- ½ teaspoon Italian seasoning
- ½ teaspoon red pepper flakes
- ¼ teaspoon salt (to taste)
- ¼ teaspoon freshly ground black pepper
- 5 cloves garlic, minced
- ¼ cup freshly squeezed lemon juice (from 1 large lemon)
- ½ cup dry white wine
- 3 tablespoons salted butter
- 3 tablespoons capers
- 3 tablespoons lemon zest
- ½ cup fresh basil, chopped
Instructions:
- Prepare the Shrimp:
- Heat a large skillet over medium heat. Add olive oil.
- Place the shrimp in the skillet without overcrowding. Sprinkle with Italian seasoning, red pepper flakes, salt, and pepper.
- Cook the shrimp for about 3-4 minutes, flipping once or twice, until pink. Avoid overcooking. Remove shrimp from the skillet.
- Make the Sauce:
- In the same skillet, add minced garlic, lemon juice, and white wine. Deglaze the pan.
- Reduce heat and cook for 2-3 minutes until the sauce slightly reduces and the garlic softens.
- Remove from heat and fold in butter until melted.
- Assembly:
- Return the cooked shrimp to the skillet with the lemon garlic butter sauce. Add 2 tablespoons of capers and stir to reheat over low heat.
- When serving, top with the remaining capers, chopped fresh basil, and lemon zest.
- Optionally, squeeze a little lemon juice over the shrimp before serving.
