  • 1 cup milk
  • 1/4 cup melted unsalted butter
  • 1 teaspoon vanilla essence
  • 1 cup pitted and chopped cherries (fresh or frozen)

Streusel Topping:

  • 1/2 cup packed brown sugar
  • 1 1/2 cups flour
  • 1/2 teaspoon ground cinnamon
  • 4 tablespoons softened unsalted butter

Preparation:

  1. Preheat your oven to 375°F (190°C) and grease or line a muffin pan with parchment paper.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix together the milk, melted butter, beaten egg, and vanilla essence until well combined.
  4. Carefully mix the wet ingredients into the dry ingredients, ensuring not to overmix.
  5. Gently fold in the chopped cherries until evenly distributed.
  6. Fill the muffin tins two-thirds full with the batter.
  7. For the streusel topping, combine the brown sugar, flour, and cinnamon in a small bowl. Add the softened butter and mix until the mixture resembles coarse crumbs.
  8. Sprinkle the streusel topping evenly over each muffin.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Tips and Variations:

  • If you don’t have fresh cherries, you can use drained canned cherries or substitute with other fruits such as peaches or blueberries.
  • For added crunch, mix 1/2 cup of chopped walnuts or pecans into the streusel topping.
  • To maintain the muffins’ tender texture, avoid overmixing the batter.
  • Frozen cherries can be used directly from the freezer without thawing.
