Delicious Beef and Cheese Chimichanga
Ingredients:
- 1 pound of high-quality ground beef
- 1 can (16 ounces) of flavorful refried beans
- 1/2 cup of finely chopped onion
- 3 cans (8 ounces each) of rich tomato sauce (divided)
- 2 teaspoons of aromatic chili powder
- 1 teaspoon of minced garlic
- 1/2 teaspoon of ground cumin
- 12 warm, large flour tortillas (10 inches in diameter)
- 1 can (4 ounces) of chopped green chilies
- 1 can (4 ounces) of chopped jalapeño peppers
- Oil for deep frying
- 1-1/2 cups of shredded cheddar cheese
Directions:
- Begin by browning the ground beef in a spacious skillet over medium heat. Ensure the beef is fully cooked and drain any excess oil.
- Combine the cooked beef with refried beans, chopped onion, 1/2 cup of tomato sauce, chili powder, minced garlic, and ground cumin.
- Lay out the warm tortillas and spoon approximately 1/3 cup of the beef mixture onto each tortilla, slightly off-center. Fold the edge closest to the filling over the mixture, then fold the left and right sides, and roll it up. Secure each chimichanga with toothpicks.
- In a separate saucepan, heat the chopped green chilies, jalapeño peppers, and remaining tomato sauce until warmed through.
- Heat oil in an electric skillet or deep fryer to 375°F. Carefully place the chimichangas in the hot oil, frying for 1.5-2 minutes on each side until golden brown. Drain on paper towels.
- Generously sprinkle shredded cheddar cheese over the chimichangas and serve with the spicy sauce on the side or poured over the top.
