Loaded Steak Quesadilla Recipe
Ingredients:
- 1 pound sirloin steak
- 1 teaspoon chili powder
- ½ teaspoon red pepper
- ¼ teaspoon cumin
- ¼ teaspoon marjoram
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon salt
- 4 large tortillas
- 2 tablespoons taco shredded cheese mix
- ½ cup cherry tomatoes, sliced
- ½ cup fire roasted dried corn
- ½ black bean, rinsed and drained
- 1 avocado, cubed
- Lemon juice and chopped coriander for garnish
Preparation:
- Preheat your oven to 425°F (220°C).
- In a small bowl, mix together the chili powder, red pepper, cumin, marjoram, garlic powder, onion powder, and salt.
- Rub the spice mixture onto the sirloin steak, ensuring it’s evenly coated.
- Heat a bit of oil in a frying pan over medium heat. Cook the steak to your desired doneness. Let it rest for a few minutes before slicing it into pieces.
- Place two large tortillas on a baking sheet lined with parchment paper. Sprinkle 1/2 cup of the taco cheese mix evenly over each tortilla.
- Distribute the sliced steak evenly over the cheese-covered tortillas.
- Add the black beans, fire roasted corn, cherry tomatoes, and cubed avocado on top of the steak.
- Garnish with a squeeze of lemon juice and a sprinkle of chopped coriander.
- Bake in the preheated oven until the tortillas are crispy and the cheese is melted, about 10-12 minutes.
- Slice and serve immediately. Enjoy!
