Cheesy Stuffed Flatbread
Ingredients
For the Dough:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon instant yeast
- 3/4 cup warm water
- 2 tablespoons olive oil
For the Filling:
- 2 cups shredded mozzarella cheese
- 1 cup crumbled feta cheese
- 1 cup shredded cheddar cheese
- 1 tablespoon chopped fresh parsley (optional)
For Cooking:
- 2 tablespoons unsalted butter, melted
- Olive oil or additional melted butter for brushing
Instructions
Prepare the Dough:
- In a large mixing bowl, combine the flour, salt, sugar, and instant yeast.
- Add the warm water and olive oil to the dry ingredients, mixing until a dough forms.
- Knead the dough on a lightly floured surface for 5-7 minutes, until it becomes smooth and elastic.
- Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.
Prepare the Filling:
- In a medium bowl, mix together the shredded mozzarella, crumbled feta, shredded cheddar, and chopped parsley (if using).
Assemble the Flatbread:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Punch down the risen dough and divide it into 2 equal portions.
- Roll out one portion of the dough on a lightly floured surface into a large circle, about 1/4 inch thick.
- Spread half of the cheese mixture evenly over the dough, leaving a small border around the edges.
- Roll out the second portion of dough into a similar-sized circle and place it over the cheese-covered dough.
- Press the edges together to seal the flatbread.
Cook the Flatbread:
- Heat a large skillet or griddle over medium heat and brush it with olive oil or melted butter.
- Carefully transfer the assembled flatbread to the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Brush the top of the cooked flatbread with melted butter.
Bake the Flatbread:
- Transfer the cooked flatbread to the prepared baking sheet.
- Bake in the preheated oven for an additional 10-12 minutes, or until the cheese is melted and bubbly.
Serve:
- Remove the flatbread from the oven and let it cool slightly before slicing.
- Serve the cheesy stuffed flatbread warm, garnished with additional parsley if desired.
