Blissful Banana Pudding Delights
Ingredients:
- 2 cups whole milk
- 1/3 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1 tablespoon unsalted butter
- 2 ripe bananas, sliced
- 1/2 cup vanilla wafers, crushed
- Whipped cream for topping
Instructions:
- In a saucepan, combine milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture starts to thicken and bubble.
- In a small bowl, whisk the egg yolks. Gradually whisk in about 1/2 cup of the hot milk mixture to temper the yolks.
- Slowly pour the tempered yolks back into the saucepan, whisking constantly. Cook for an additional 2 minutes, until the pudding is thick and creamy.
- Remove from heat and stir in vanilla extract and butter until well combined.
- In serving cups, layer crushed vanilla wafers, followed by slices of banana, and then pour the warm pudding over the top.
- Refrigerate for at least 2 hours until set.
- Top with whipped cream before serving.
