Ingredients:

  • For the Base:
    • 150 grams (approximately 1 package) of cookies
    • 80 grams of butter
  • For the Cream Cheese Filling:
    • 400 grams of cream cheese
    • 160 grams of whipping cream
    • 3 eggs
    • 100 grams of sugar
    • 2 tablespoons cornstarch
  • For the Topping:
    • Strawberry jam (or topping of your choice)

Instructions:

  1. Prepare the Base:
    1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
    2. Crush the cookies into fine crumbs. You can use a food processor or place them in a plastic bag and crush with a rolling pin.
    3. Melt the butter and mix it thoroughly with the cookie crumbs.
    4. Press the mixture firmly into the base of a 20 cm (8-inch) diameter cake mold.
    5. Bake the base for 10-15 minutes until lightly golden. Allow it to cool completely.
  2. Make the Cream Cheese Filling:
    1. Reduce the oven temperature to 160 degrees Celsius (325 degrees Fahrenheit).
    2. In a mixing bowl, beat the cream cheese until smooth and creamy.
    3. Add the whipping cream, eggs, sugar, and cornstarch. Mix until well combined and smooth.
  3. Assemble and Bake:
    1. Pour the cream cheese filling over the cooled cookie base in the cake mold.
    2. Bake in the preheated oven at 160 degrees Celsius (325 degrees Fahrenheit) for approximately 50 minutes. The baking time may vary, so check the cheesecake’s center for slight jiggle when gently shaken.
    3. Turn off the oven and let the cheesecake cool inside with the oven door slightly ajar for about an hour. This helps prevent cracking.
    4. Chill the cheesecake in the refrigerator for at least 4 hours or overnight.
  4. Serve:
    1. Once chilled, spread a layer of strawberry jam (or your preferred topping) over the surface of the cheesecake.

  • For a taller cheesecake in a larger mold (22-24 cm), increase the ingredients by 2/3 rather than doubling them.
