Turkish Mantı Recipe
Ingredients:
For the Dough:
- 1 egg
- 1 teacup of oil
- 1 teaspoon of yogurt
- 1 teaspoon of water
- 1/2 tablespoon of salt
- 1 packet of baking powder
- 1 tablespoon of vinegar
- 4.5-5 cups of flour
For the Filling:
- 3 dry onions
- 3 tablespoons of oil
- 500 g medium-fat ground beef
- Salt
- Black pepper
- Oregano
- Ground red pepper
For the Topping:
- 1 egg yolk
- 1 tablespoon of milk
Instructions:
For the Dough:
- In a mixing bowl, combine 1 egg, teacup of oil, yogurt, water, salt, baking powder, and vinegar. Mix well.
- Gradually add 4.5-5 cups of flour to the mixture, kneading until you have a smooth and elastic dough. Cover it with a clean cloth and let it rest for 30 minutes.
For the Filling:
- Finely chop the dry onions.
- In a pan, heat 3 tablespoons of oil and sauté the chopped onions until they turn translucent.
- Add the ground beef and cook until it’s browned and cooked through.
- Season the mixture with salt, black pepper, oregano, and ground red pepper according to your taste. Remove it from heat and let it cool.
Assembly:
- Roll out the rested dough on a floured surface until it’s very thin, almost paper-thin.
- Cut the dough into small squares, about 4×4 cm in size.
- Place a small amount of the prepared beef filling in the center of each dough square.
- Fold the dough over the filling to create a triangle or rectangle shape and press the edges to seal them tightly.
- In a large pot of salted boiling water, cook the Mantı until they float to the surface, usually for about 5-7 minutes. Remove them with a slotted spoon and place them in a serving dish.
For the Topping:
- In a small bowl, whisk together 1 egg yolk and 1 tablespoon of milk.
To Serve:
Drizzle the egg yolk and milk mixture over the cooked Mantı.
Optionally, you can top them with some melted butter or garlic yogurt sauce.
