Swedish Meatballs with Egg Noodles

Ingredients:

Meatballs:

  • 1 pound ground beef (80/20 mix)
  • 1 pound ground pork
  • 1 onion, finely diced
  • 1 teaspoon olive oil (for sautéing)
  • 1 slice of bread
  • ¼ cup milk
  • 2 eggs
  • ½ cup bread crumbs
  • 1 teaspoon salt
  • 1 ½ teaspoons pepper
  • 1 teaspoon nutmeg
  • ½ teaspoon cloves (or allspice)

Gravy:

  • 4 tablespoons butter
  • ⅓ cup all-purpose flour
  • ⅓ cup sour cream
  • 4 cups unsalted beef broth
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoons parsley (fresh or dried)
  • 4 cups egg noodles (uncooked)

Equipment Needed:

  • Instant Pot or Dutch Oven
  • Large mixing bowl
  • Silicone-coated whisk
  • Wooden spatula
  • Meatball maker

Preparation:

  1. Prepare the Onions:
    • Finely dice the onion and sauté in a small pan or Instant Pot with olive oil until translucent.
  2. Soak the Bread:
    • In a bowl, soak the bread slice in milk until fully absorbed.
  3. Mix Meatball Ingredients:
    • In a large mixing bowl, combine ground pork, ground beef, soaked bread, eggs, sautéed onions, bread crumbs, salt, pepper, nutmeg, and cloves. Mix thoroughly.
  4. Form Meatballs:
    • Shape into 1 ½- to 2-inch meatballs (makes approximately 24 meatballs).
  5. Brown the Meatballs:
    • Brown meatballs in the Instant Pot on broil for about 15 minutes or sauté in batches until browned.
  6. Prepare the Gravy:
    • Preheat the Instant Pot to sauté mode. Melt butter, add flour, and whisk to form a roux. Cook for a few minutes until golden.
    • Quickly whisk in sour cream.
    • Gradually add beef broth, whisking constantly to avoid lumps.
  7. Combine and Cook:
    • Season with salt, pepper, and parsley.
    • Return meatballs to the Instant Pot, add uncooked egg noodles.
  8. Cook the Dish:
    • Cover and cook according to Instant Pot instructions until meatballs are cooked through and noodles are tender.
