Pineapple Sweet Chili Sauce: A Summer Staple

I love to make large quantities of this sauce and use it all summer long.

Ingredients:

  • 1 cup drained crushed pineapple
  • 1/2 cup sweet chili sauce
  • 2 teaspoons soy sauce
  • 1 teaspoon rice vinegar
  • 1/3 cup brown sugar
  • 1 teaspoon finely chopped fresh ginger
  • 1 minced garlic clove
  • 1/4 teaspoon red pepper flakes (optional, for a spicy kick)

Preparation:

  1. In a medium-sized pot, combine the crushed pineapple, sweet chili sauce, soy sauce, rice vinegar, and brown sugar.
  2. Add the minced garlic and chopped ginger, stirring well to blend all ingredients.
  3. Place the pot over medium heat. Stir occasionally and bring the mixture to a gentle boil.
  4. Once boiling, reduce the heat to a simmer. Cook for 10 to 15 minutes, or until the sauce reaches your desired thickness.
  5. For an extra burst of flavor, add the red pepper flakes while the sauce is cooking.
  6. Remove the sauce from the heat and allow it to cool slightly before serving.

  • For more heat, add a dash of hot sauce or extra red pepper flakes.
  • To enhance the richness, consider adding a small amount of sesame oil.
  • For a tangier flavor, try adding a splash of freshly squeezed lime juice.
  • If you prefer a lower sugar option, substitute brown sugar with honey or agave syrup.
