Peach Cobbler Egg Rolls

Ingredients:

  • 10 egg roll wrappers
  • 1 large can of sliced peaches, drained and rinsed
  • ¼ cup water
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • Squeeze of fresh lemon juice
  • 1 large egg, beaten
  • 2 tablespoons melted butter
  • ½ cup brown sugar
  • 1 tablespoon + 1 teaspoon cinnamon, divided

Directions:

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Dice the peaches and place them in a skillet over medium-high heat on the stove.
  3. In a small bowl, mix the cornstarch with water and add it to the skillet along with the granulated sugar. Stir until the sugar is dissolved, and the mixture thickens.
  4. Stir in the vanilla extract, 1 teaspoon of cinnamon, and a squeeze of fresh lemon juice.
  5. Remove the peach mixture from the heat and let it cool.
  6. Place an egg roll wrapper on a flat surface and spoon a layer of the peach filling onto one end.
  7. Fold the sides of the wrapper in and roll it closed. Use a bit of beaten egg to seal the egg roll shut.
  8. Dip the egg roll into the melted butter.
  9. In a separate bowl, combine the brown sugar with 1 tablespoon of cinnamon. Roll the butter-dipped egg rolls in the cinnamon sugar mixture until coated.
  10. Place the coated egg rolls on a parchment-lined baking sheet and bake for 15-20 minutes, or until they are golden brown and crispy.
