Making Perfect Apple Fritter Bread
Ingredients
For the Bread:
- 1/3 cup brown sugar
- 2 teaspoons ground cinnamon
- 2 apples (preferably Honeycrisp or Gala), peeled, cored, and chopped
- 2/3 cup granulated sugar
- 1/2 cup softened unsalted butter
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoons baking powder
- 1/2 cup milk
For the Glaze:
- 1/2 cup powdered sugar
- 2-3 tablespoons milk or cream
- Optional: 1/2 teaspoon vanilla extract
Preparation
Preheat the Oven and Prepare the Pan:
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
Prepare the Apple Mixture:
- In a small bowl, mix the brown sugar and ground cinnamon. Set aside.
- In another bowl, toss the chopped apples with 2 teaspoons of the brown sugar-cinnamon mixture until well-coated. Set aside.
Make the Batter:
- In a large bowl, beat the softened butter and granulated sugar together until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Combine the Dry Ingredients:
- In a separate bowl, whisk together the flour and baking powder.
Incorporate Dry Ingredients into Wet Ingredients:
- Gradually add the dry ingredients to the creamed mixture, alternating with the milk. Mix until just combined.
Assemble the Bread:
- Pour half of the batter into the prepared loaf pan. Spread half of the apple mixture over the batter, then sprinkle with half of the remaining brown sugar-cinnamon mixture.
- Pour the remaining batter over the apple layer, then top with the remaining apple mixture and the rest of the brown sugar-cinnamon mixture.
Bake:
- Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Prepare the Glaze:
- While the bread is cooling, combine the powdered sugar, milk (or cream), and vanilla extract (if using) in a bowl until smooth. If the glaze is too thick, add a little more milk until it reaches a drizzling consistency.
Finish:
- Once the bread has cooled, drizzle the glaze over the top. Allow the glaze to set, then slice and serve.
