Lemon Sauce Recipe for Fish
Ingredients:
- 1 lemon (zest and juice)
- 100 ml heavy cream
- 50 g butter
- 1 shallot, finely chopped
- 100 ml dry white wine
- Salt and pepper
- Fresh parsley, chopped (optional)

Prepare the Lemon:
- Grate the lemon zest and extract the juice.

Melt the Butter:
- Melt the butter in a saucepan over medium heat.

Cook the Shallot:
- Add the finely chopped shallot and sauté until translucent.

Deglaze with White Wine:
- Pour in the white wine and let it reduce by half.

Add the Cream:
- Stir in the heavy cream and cook on low heat for 2-3 minutes.

Add the Lemon:
- Add the lemon zest and juice. Mix well and simmer for another 2-3 minutes.

- Season with salt and pepper to taste.

- Optionally, add fresh chopped parsley for a final touch.
