- 2 eggplants

- 4 tablespoons ricotta cheese
- 1 onion, chopped
- 1 green pepper, chopped
- 1 (15 ounce) can crushed tomatoes
- 1 (15 ounce) can diced tomatoes
- Olive oil (for cooking and drizzling)
- Salt and pepper (to taste)
- Optional: Grated cheese (such as Parmesan or mozzarella, for topping)
- Fresh herbs (such as basil or parsley, for garnish)
Instructions:
- Begin by halving the eggplants lengthwise and carefully scooping out the insides, leaving enough flesh on the skins to maintain their shape during baking.
- Sprinkle the eggplant halves with salt and allow them to rest for approximately 30 minutes to draw out excess moisture.
- Meanwhile, heat olive oil in a skillet over medium heat.
- Sauté the chopped onion and green pepper until they begin to soften.
- Add the spinach to the skillet and cook until it wilts.
- Incorporate the ricotta cheese into the vegetable mixture, ensuring thorough mixing.
- Season the mixture with salt and pepper according to taste.
