Ingredients:

  • 1 pound of tender chicken breast, diced into bite-sized chunks
  • 2 cups of pre-cooked rice, preferably aged for enhanced flavor
  • 1 cup of assorted vegetables (carrots, peas, and corn)
  • 2 large eggs, lightly whisked
  • 3 tablespoons of premium soy sauce
  • 1 tablespoon of aromatic sesame oil
  • 2 tablespoons of high-quality vegetable oil, divided
  • 2 cloves of garlic, finely minced
  • Pinch of salt and freshly ground pepper to elevate taste
  • Fresh green onions and sesame seeds for a vibrant garnish

Directions:

  1. Begin by heating 1 tablespoon of vegetable oil in a spacious skillet or traditional wok over medium-high heat. Introduce the diced chicken, seasoned judiciously with salt and pepper, and sauté until impeccably golden brown and thoroughly cooked. Once done, transfer the chicken to a plate and keep it aside.
  2. Utilizing the same skillet, add the remaining vegetable oil. Incorporate the minced garlic and assorted vegetables, allowing them to sauté until they reach a tender yet crisp consistency.
  3. Create space within the skillet by pushing the sautéed vegetables to one side, and pour in the whisked eggs on the other side. Scramble the eggs gently until they are fully cooked and delicately set.
  4. Integrate the pre-cooked rice, previously cooked chicken, soy sauce, and sesame oil into the skillet. Stir the ingredients meticulously, ensuring even distribution, and cook until the rice is thoroughly heated and develops a delightful crispness at the bottom.
  5. Prior to serving, adorn the dish with freshly chopped green onions and a sprinkling of sesame seeds to impart both visual appeal and a final touch of flavor.
