Delicious Wet Burritos
Ingredients:
- 1 lb ground beef
- 1/2 cup chopped onion
- 2 teaspoons minced garlic
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 4.5 oz diced green peppers
- 16 oz refried beans
- 8 oz tomato sauce
- 10 oz enchilada sauce
- 15 oz Beanless Chili (Hormel)
- 6 flour burrito tortillas (approximately 12 inches)
- 2 cups shredded lettuce
- 3 cups shredded Mexican cheese
- Minced green onions (for garnish)
- Any additional desired toppings
Instructions:
1. Preheat the oven to 400 degrees F (200 degrees C).
2. In a skillet over medium-high heat, brown the ground beef and onion until evenly browned and the onion softens.
3. Drain excess grease, then add garlic, cumin, salt, and pepper. Stir in diced green peppers and refried beans until well combined. Keep warm but turn off the heat.
4. In another skillet, mix together tomato sauce, Beanless Chili, and enchilada sauce. Heat over medium heat until warmed through. Keep warm but turn off the heat.
5. Divide the beef and bean mixture into 6 portions in the skillet.
6. Place a tortilla on a plate and spoon 1/6 of the beef mixture into the center.
7. Top with cheese and lettuce (omit lettuce if you prefer it uncooked). Optionally, add other vegetables or toppings.
8. Fold the left and right sides of the tortilla over the filling, then fold the top and bottom sides onto the filling (like an envelope) ensuring it is sealed well.
9. Repeat with the remaining tortillas.
10. Place the burritos seam-side down in two greased 9×13-inch oven-safe dishes.
11. Pour the sauce mixture evenly over the burritos.
12. Sprinkle the remaining cheese evenly over the top.
13. Bake in the preheated oven for 15-20 minutes, until the burritos are heated through and the cheese is melted.
14. Serve topped with additional lettuce, tomatoes, sour cream, minced green onions, or other desired toppings. Enjoy your mouthwatering wet burritos!
