Soufflé Castella Cake Recipe

Ingredients:

  • 105g all-purpose flour
  • 80ml vegetable oil
  • 120ml full-fat milk
  • 100g superfine sugar
  • 6 Grade A eggs

Instructions:

  1. Preheat the oven to 165°C.
  2. Sift the all-purpose flour.
  3. Separate the eggs into two bowls, yolks in one and whites in the other.
  4. In the yolks bowl, add vegetable oil and full-fat milk.
  5. While still warm, add the mixture to the sifted flour. Whisk until thickened.
  6. Add yolks one at a time, mixing well after each addition.
  7. In another bowl, beat egg whites until foamy, gradually adding superfine sugar in three batches until soft peaks form.
  8. Gently fold a small portion of egg whites into the yolk mixture, then transfer the combined mixture back to the remaining egg whites. Fold until evenly mixed.
  9. Pour the batter into a 21 x 21 x 7cm mold lined with non-stick parchment paper.
  10. Bake in the preheated oven for 70-75 minutes until golden brown and cooked through.
