Decadent No-Bake Chocolate Eclair Delight
Indulge in the Delight of a Classic No-Bake Chocolate Eclair
Ingredients:
- 1-2 sleeves of graham crackers
- 1 cup of chocolate chips (dark or semi-sweet)
- 2 cups of milk
- 1 3/4 cups of heavy whipping cream (divided)
- 1 package of vanilla instant pudding mix
Instructions:
- In a mixing bowl, whip 1 cup of heavy cream until it forms firm peaks. Refrigerate while preparing other components.
- Heat the remaining 3/4 cup of heavy cream until it just begins to bubble, then pour over the chocolate chips. Let it sit for a minute, then stir until smooth, creating a luscious ganache.
- Layer graham crackers at the bottom of a 9″ x 9″ baking dish.
- Prepare the vanilla pudding according to package instructions using 2 cups of cold milk. Once done, gently fold in the chilled whipped cream to maintain its airy texture.
- Pour half of the pudding mixture over the layer of graham crackers in the dish, then add another layer of graham crackers on top. Pour the remaining pudding mixture over the second layer of graham crackers.
- Evenly spread the chocolate ganache over the top layer.
- Cover and refrigerate the cake for at least 2 hours, or overnight, to allow the layers to set and the flavors to meld.
