Classic Pot Roast Recipe
Ingredients:
- 3 pounds chuck roast, shoulder cut
- Table salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 chopped onion
- 3 garlic cloves, chopped or minced
- 1 tablespoon tomato paste
- 2 tablespoons all-purpose flour or cassava flour
- 1/2 cup red wine
- 2 cups beef broth
- 2 pounds small yellow potatoes
- 1 pound carrots, cut
- 2 bay leaves
- Fresh parsley or coriander
- Fresh thyme
Preparation:
- Season the meat with salt and pepper on all sides.
- Heat olive oil in a Dutch oven or large pot. Brown the roast on all sides to seal in moisture and flavor (approximately 15 minutes). Place it on a plate to cool.
- Add chopped onion and garlic to the remaining fat in the pot. Cook until the onion is translucent (about 2-3 minutes). Add tomato paste and flour, allowing the flour to absorb moisture. Pour in the wine, whisk, and simmer for 1-2 minutes. Add beef broth, bay leaves, and two sprigs of fresh thyme.
- Return the beef to the pot. Arrange carrots and potatoes around the roast in the broth. Cook covered at 350°F for 2 1/2 to 3 hours.
- Garnish with fresh parsley or coriander before serving.
