Classic Pot Roast Recipe

Ingredients:

  • 3 pounds chuck roast, shoulder cut
  • Table salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 1 chopped onion
  • 3 garlic cloves, chopped or minced
  • 1 tablespoon tomato paste
  • 2 tablespoons all-purpose flour or cassava flour
  • 1/2 cup red wine
  • 2 cups beef broth
  • 2 pounds small yellow potatoes
  • 1 pound carrots, cut
  • 2 bay leaves
  • Fresh parsley or coriander
  • Fresh thyme

Preparation:

  1. Season the meat with salt and pepper on all sides.
  2. Heat olive oil in a Dutch oven or large pot. Brown the roast on all sides to seal in moisture and flavor (approximately 15 minutes). Place it on a plate to cool.
  3. Add chopped onion and garlic to the remaining fat in the pot. Cook until the onion is translucent (about 2-3 minutes). Add tomato paste and flour, allowing the flour to absorb moisture. Pour in the wine, whisk, and simmer for 1-2 minutes. Add beef broth, bay leaves, and two sprigs of fresh thyme.
  4. Return the beef to the pot. Arrange carrots and potatoes around the roast in the broth. Cook covered at 350°F for 2 1/2 to 3 hours.
  5. Garnish with fresh parsley or coriander before serving.
