Roasted Vegetables Medley

Ingredients:

  • 2 pounds of fresh carrots
  • 6 whole potatoes
  • 1 whole sweet onion
  • 3 cloves of garlic
  • 6 tablespoons of high-quality olive oil
  • ½ teaspoon of dried thyme
  • ½ teaspoon of dried parsley
  • Salt and freshly ground black pepper, to taste

Directions:

  1. Preheat your oven to 475ºF (245ºC).
  2. Begin by peeling the carrots and cutting them into bite-sized pieces. Similarly, dice the potatoes into bite-sized pieces, ensuring to leave the skin on for added texture and flavor. Cut the onion into eighths and mince the garlic cloves.
  3. In a large mixing bowl, combine the prepared carrots, potatoes, and onion. Drizzle the olive oil generously over the vegetables, and then add the minced garlic, dried thyme, dried parsley, salt, and pepper according to your taste preferences.
  4. Toss the vegetables gently until they are evenly coated with the olive oil and seasoning mixture.
  5. Spread the seasoned vegetables onto a large baking sheet, ensuring they are arranged in a single layer. Cover the baking sheet with aluminum foil.
  6. Roast the vegetables in the preheated oven for 45 minutes. Then, remove the foil and continue roasting for an additional 30 minutes or until they turn golden brown, remembering to stir the vegetables every 10 minutes for even cooking.
