Baked Sweet and Sour Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cornstarch
  • 2 large eggs
  • 1/4 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup ketchup
  • 1/2 cup apple cider vinegar
  • 2 tbsp soy sauce
  • 1 tsp garlic powder
  • 1/2 tsp sea salt

Instructions:

  1. Preheat the oven to 325°F (163°C) and line a 13 x 9-inch baking pan with parchment paper. Set aside.
  2. Season chicken breast pieces with salt and pepper.
  3. Place cornstarch in a large Ziploc bag, add chicken pieces, seal the bag, and shake to evenly coat the chicken with cornstarch.
  4. Beat the two large eggs in a shallow bowl.
  5. Heat vegetable oil in a skillet over medium-high heat until sizzling.
  6. Dip each cornstarch-coated chicken piece into the beaten eggs, ensuring thorough coating.
  7. Sear the coated chicken pieces in the skillet until golden brown, then transfer to the prepared baking pan.
  8. In a medium-sized bowl, combine granulated sugar, ketchup, apple cider vinegar, soy sauce, garlic powder, and sea salt. Whisk until well mixed.
  9. Pour the sweet and sour sauce over the chicken in the baking pan.
  10. Bake in the preheated oven for about 1 hour, tossing the chicken halfway through for even coating and cooking.
  11. Once fully cooked and the sauce has thickened, remove from the oven.
  12. Serve the Baked Sweet and Sour Chicken with rice or your preferred side dish.
