Indulgent Chocolate Delight Muffins
Ingredients:
- 1 ¾ cups of all-purpose flour
- 1 cup of granulated sugar
- ½ cup of unsweetened cocoa powder
- 1 teaspoon of baking powder
- ½ teaspoon of baking soda
- ½ teaspoon of salt
- 1 cup of buttermilk
- ½ cup of vegetable oil
- 2 large eggs
- 2 teaspoons of vanilla extract
- 1 cup of chocolate chips (semi-sweet or dark)
- Optional: chopped nuts or chocolate chunks for added texture
Instructions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, thoroughly whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until uniformly combined.
- In another bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until the mixture is smooth.
- Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Avoid overmixing; a few lumps are acceptable.
- Stir in the chocolate chips (and nuts or chocolate chunks if desired).
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake in the preheated oven for approximately 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean or with only a few moist crumbs.
- Remove the muffins from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
