Chicken and Potato Lasagna Recipe

Chicken and Potato Lasagna

Ingredients:

  • 2 tablespoons olive oil
  • 1 finely chopped onion
  • 2 garlic cloves, crushed
  • 450g cooked and shredded chicken
  • 1 cup tomato sauce
  • 1 cup cream cheese (200g)
  • Salt, black pepper, and chopped parsley to taste
  • 500g peeled potatoes
  • Olive oil for greasing
  • 400g grated provolone cheese for sprinkling

Instructions:

  1. In a pan over medium heat, heat olive oil and sauté chopped onion and crushed garlic for 4 minutes.
  2. Add the cooked chicken and tomato sauce, sautéing for an additional 3 minutes.
  3. Incorporate the cream cheese, salt, black pepper, and chopped parsley. Mix well.
  4. Cut the potatoes into slices using a mandolin and soak them in water until ready to use.
  5. In a greased medium-sized baking dish, layer the chicken mixture, potato slices, another layer of chicken mixture, and finally a layer of provolone cheese on top.
  6. Bake in a preheated oven for 30 minutes or until golden brown.
  7. Remove from the oven and serve your delicious chicken and potato lasagna. Enjoy!
