Basbosa with Almonds
Ingredients:
- 2 cups medium semolina
- ¼ cup fresh almonds
- 1 teaspoon baking powder
- A pinch of salt
- 3 tablespoons sugar
- ¼ cup oil or melted butter
- 2 cups vanilla yogurt
- 2 tablespoons rose water or orange blossom water
- White almonds for decoration
Syrup or Honey:
- 4 cups sugar
- 3 cups water
- 2 tablespoons lemon juice
- 2 tablespoons rose water or orange blossom water
Instructions:
- Preheat your oven to 200°C (390°F).
- In a mixing bowl, combine the semolina, baking powder, almonds, sugar, and salt. Mix well.
- Add the yogurt, oil or melted butter, and rose water (or orange blossom water). Stir until well incorporated.
- Grease a baking dish with butter. Pour the mixture into the dish and level it out.
- Cut the batter into squares and decorate each piece with a white almond.
- Bake in the preheated oven for 20 to 25 minutes, or until the top is golden brown.
For the Syrup:
- In a saucepan, combine sugar, water, and lemon juice. Bring to a boil.
- Reduce heat and let it simmer for about 15 minutes, or until the syrup thickens slightly.
- Stir in the rose water (or orange blossom water) and remove from heat.
To Finish:
- Once the basbosa is done baking, pour the hot syrup evenly over the cake while it is still warm.
- Allow the basbosa to rest and absorb the syrup before serving.
