Perfect Seven-Minute Frosting Recipe

Ingredients:

  • 1 1/2 cups refined sugar
  • 1/3 cup cold water
  • 1/4 teaspoon cream of tartar
  • 3 egg whites
  • 1 teaspoon vanilla extract

Preparation:

  1. In a large pot, combine the sugar, water, and cream of tartar. Heat the mixture over medium heat, stirring occasionally until the sugar dissolves and the mixture begins to boil.
  2. Once boiling, stop stirring and allow the mixture to reach 115°C (240°F) on a candy thermometer. This should take about 5-7 minutes.
  3. While the sugar mixture is heating, place the egg whites in a large bowl and beat them with an electric mixer until stiff peaks form.
  4. When the sugar mixture reaches 240°F, remove it from the heat and gradually pour it into the bowl with the egg whites, continuing to beat on high speed.
  5. Continue to beat the mixture on high speed for about 7 minutes, or until the frosting is thick, glossy, and holds its shape. Add the vanilla extract and beat for an additional 30 seconds.
  6. Use the frosting immediately to frost cupcakes or cakes.
