Perfect Seven-Minute Frosting Recipe
Ingredients:
- 1 1/2 cups refined sugar
- 1/3 cup cold water
- 1/4 teaspoon cream of tartar
- 3 egg whites
- 1 teaspoon vanilla extract
Preparation:
- In a large pot, combine the sugar, water, and cream of tartar. Heat the mixture over medium heat, stirring occasionally until the sugar dissolves and the mixture begins to boil.
- Once boiling, stop stirring and allow the mixture to reach 115°C (240°F) on a candy thermometer. This should take about 5-7 minutes.
- While the sugar mixture is heating, place the egg whites in a large bowl and beat them with an electric mixer until stiff peaks form.
- When the sugar mixture reaches 240°F, remove it from the heat and gradually pour it into the bowl with the egg whites, continuing to beat on high speed.
- Continue to beat the mixture on high speed for about 7 minutes, or until the frosting is thick, glossy, and holds its shape. Add the vanilla extract and beat for an additional 30 seconds.
- Use the frosting immediately to frost cupcakes or cakes.
