Spinach and Egg Skillet with Cheese
Ingredients:
- A handful of fresh spinach leaves
- 2-3 eggs
- 1/2 cup shredded cheese (cheddar or similar)
- 1 onion, finely chopped
- Salt and pepper, to taste
- Olive oil or butter for cooking
Instructions:
- Prepare the Spinach: Rinse the spinach leaves thoroughly to remove any dirt or grit. Drain and set aside.
- Cook the Onion: Heat a small amount of olive oil or melt butter in a skillet over medium heat. Add finely chopped onions and sauté until translucent and slightly golden, about 5-7 minutes.
- Add the Spinach: Add the rinsed spinach leaves to the skillet with the onions. Cook until wilted, approximately 2-3 minutes, stirring frequently to combine flavors.
- Cook the Eggs: Create small wells in the spinach and onion mixture and crack an egg into each well. Season with salt and pepper. Cover the skillet with a lid and cook the eggs to your desired doneness. For fully set whites and runny yolks, cook for 3-5 minutes.
- Add Cheese: Sprinkle shredded cheese over the spinach and eggs when the eggs are nearly cooked. Cover the skillet for about a minute to melt the cheese.
- Serving: Remove the skillet from heat when the cheese is melted and bubbly. Serve hot directly from the skillet for a hearty breakfast or nutritious meal any time of day.
