Ingredients:
- 3 pounds beef chuck roast
- 2 tablespoons olive oil
- 1 cup beef broth
- 3 carrots, peeled and cut into 2-inch pieces
- 2 onions, quartered
- 3 potatoes, peeled and cut into eighths
- 4 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
Directions:
- Preheat Oven: Preheat your oven to 325°F (165°C).
- Season and Sear Roast: Season the beef chuck roast generously with salt and pepper. In a large oven-proof pot, heat olive oil over medium-high heat. Add the roast and sear until well-browned on all sides. Remove the roast and set aside.
- Sauté Vegetables: In the same pot, add onions and garlic. Sauté until softened and fragrant.
- Combine Ingredients: Return the seared roast to the pot. Add beef broth, Worcestershire sauce, carrots, potatoes, rosemary, and thyme.
- Bake: Cover the pot with a lid and transfer it to the preheated oven. Bake for 3 to 4 hours, or until the meat is fork-tender.
- Serve: Remove the pot from the oven. Discard the rosemary and thyme sprigs. Serve the pot roast hot, accompanied by the vegetables and juices.
