Pineapple Sweet Chili Sauce: A Summer Staple
I love to make large quantities of this sauce and use it all summer long.
Ingredients:
- 1 cup drained crushed pineapple
- 1/2 cup sweet chili sauce
- 2 teaspoons soy sauce
- 1 teaspoon rice vinegar
- 1/3 cup brown sugar
- 1 teaspoon finely chopped fresh ginger
- 1 minced garlic clove
- 1/4 teaspoon red pepper flakes (optional, for a spicy kick)
Preparation:
- In a medium-sized pot, combine the crushed pineapple, sweet chili sauce, soy sauce, rice vinegar, and brown sugar.
- Add the minced garlic and chopped ginger, stirring well to blend all ingredients.
- Place the pot over medium heat. Stir occasionally and bring the mixture to a gentle boil.
- Once boiling, reduce the heat to a simmer. Cook for 10 to 15 minutes, or until the sauce reaches your desired thickness.
- For an extra burst of flavor, add the red pepper flakes while the sauce is cooking.
- Remove the sauce from the heat and allow it to cool slightly before serving.
