Stuffed Pepper Casserole
Ingredients
- 1 pound ground beef
- 2 bell peppers, chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 (15 oz) can low sodium beef broth
- 1 (15 oz) can diced tomatoes
- 1 cup uncooked long grain white rice
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup Mozzarella cheese, shredded
- 3/4 cup cheddar cheese, shredded
Instructions
- Cook the Ground Beef: In a large skillet, cook the ground beef, breaking it apart as it cooks. Once it is mostly cooked, add in the onions and bell peppers. Continue to cook for 5-10 minutes until the vegetables start to soften.
- Add Garlic: Add the minced garlic to the beef mixture and cook for another minute or two until fragrant.
- Combine Ingredients: Stir in the rest of the ingredients, except for the cheese. Bring the mixture to a boil.
- Simmer: Cover the skillet and reduce the heat to a simmer. Cook for about 20 minutes, stirring halfway through the cooking time, until the rice is tender.
- Incorporate Cheese: Once the rice is tender, stir in about half of the shredded cheese until it is melted and well incorporated with the beef and rice mixture.
- Top with Cheese: Sprinkle the remaining cheese over the top of the casserole. Cover the skillet again and let the cheese melt. For a quicker method, you can place the skillet under the broiler (if it is oven-safe) to melt the cheese faster.
- Serve: Remove from the heat and serve immediately. Enjoy your stuffed pepper casserole!
