Thai Chicken Stir Fry with Green Beans ️
Ingredients:
- 2 lbs boneless, skinless chicken thighs, cut into cubes
- 3 tbsp cornstarch
- 1/4 cup vegetable oil, plus 2 additional tbsp (or more as needed)
- 2 bell peppers, sliced
- 1 cup steamed green beans
- 1/2 tbsp minced garlic cloves
- 1/4 tsp ginger (optional)
- 1 tsp garlic powder
- 1 tsp crushed red pepper
- 1/8 tsp sesame oil
- 1 1/4 cup sweet chili sauce
Instructions:
- In a bowl, toss the chicken cubes with 1/4 cup of vegetable oil, garlic powder, salt, pepper, and cornstarch until well coated.
- Heat the remaining oil in a skillet over medium-high heat. Cook the chicken in batches until crispy and golden brown.
- In the same skillet, sauté the sliced bell peppers until they become tender.
- Add the minced garlic and cook for about 30 seconds until fragrant. Return the cooked chicken to the skillet, then add the steamed green beans, sweet chili sauce, sesame oil, ginger, and crushed red pepper.
- Stir everything together until the chicken and vegetables are evenly coated with the sauce. Serve immediately.
