Super Soft Butter Cake Recipe
INGREDIENTS
- 1 3/4 cup (230 grams/8.1 ounces) Cake Flour
- 1/2 teaspoon baking powder
- 1 cup (250 grams/8.8 ounces) butter
- 1 cup (200 grams/7 ounces) castor sugar
- 5 eggs
- 1 teaspoon vanilla extract
- 1/4 cup (59ml) milk
INSTRUCTIONS
Indulge in the delight of this incredibly soft and moist butter cake. With a simple preparation process, this cake promises a melt-in-your-mouth experience.
- Begin by sifting 230 grams of all-purpose flour into a large bowl. Add 1/2 teaspoon of baking powder to the flour and sift the mixture two to three times to incorporate air into the batter. Set aside.
- In another bowl, ensure your butter is at room temperature and beat it until it is very soft. Incorporate a cup of sugar into the softened butter and beat the mixture at low speed for approximately 2 minutes. Scrape the sides of the bowl and continue beating the mixture for an additional 15 minutes. Properly beating the butter and sugar until pale is crucial for the recipe.
- Once the butter and sugar are well combined, add the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Incorporate the vanilla extract into the mixture and beat for an additional minute. Optionally, omit the vanilla extract if you prefer to highlight the butter flavor.
- Gradually add the sifted dry ingredients to the butter mixture, spoon by spoon, while continuing to beat the mixture. Halfway through adding the dry ingredients, pour half of the milk into the batter and mix it thoroughly. Continue adding the remaining dry ingredients until the batter is dense.
- Add the remaining milk and beat the batter until it is light, fluffy, and free of lumps. Prepare a 7 by 7-inch square cake pan by greasing it and lining it with parchment paper.
- Pour the prepared batter into the cake tin, ensuring the top is smooth. Bake the cake in a preheated oven at 320 degrees Fahrenheit (160°C) for 55 to 65 minutes, checking for doneness after 50 minutes. The cake should achieve a golden brown color, and a toothpick inserted into the center should come out clean or with a few moist crumbs.
