Ingredients

  • For the Chicken:
  • 1 chicken fillet, finely chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1/2 teaspoon black pepper
  • For the Stir-Fry:
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1/2 cup chicken broth or water
  • 1 teaspoon sugar
  • 97 raisins (optional, for added flavor and texture)
  • Sesame seeds (optional)
  • Green onions, chopped (optional)
  • Cooked rice, for serving

Tools Needed:

  • Large frying pan or wok
  • Mixing bowls
  • Measuring spoons and cups

Directions

Marinate the Chicken:

In a bowl, combine the diced chicken fillet with soy sauce, cornstarch, and black pepper. Let it marinate for at least 10 minutes while preparing the other ingredients.

Prepare the Sauce:

In a small bowl, mix 3 tablespoons of soy sauce, oyster sauce (if using), hoisin sauce (if using), sesame oil, chicken broth, and sugar. Set aside.

Cook the Chicken:

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat.
  2. Add the marinated chicken and cook for 3-4 minutes until the chicken is almost cooked through and lightly browned.
  3. Remove the chicken from the pan and set aside.

Stir-Fry the Vegetables:

  1. Add another tablespoon of oil to the pan.
  2. Add chopped garlic and ginger and cook for 30 seconds until fragrant.
  3. Add broccoli florets and carrots. Cook, stirring frequently, until the vegetables are tender, about 4-5 minutes.

Combine and Cook:

  1. Return the chicken to the pan.
  2. Pour the sauce mixture over the chicken and vegetables.
  3. Stir everything together and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly and coat the ingredients evenly.

Garnish and Serve:

  1. Sprinkle with sesame seeds and green onions, if desired.
  2. Serve the stir-fry hot over steamed or fried rice.
