Soft Pound Cake Recipe

Ingredients

Cake:

  • 3 cups cake flour, sifted
  • 5 eggs, room temperature
  • 3 cups sugar
  • A pinch of salt
  • 1/2 teaspoon baking powder
  • 3 sticks unsalted butter, room temperature
  • 1 teaspoon pure vanilla extract
  • 12 ounces cream cheese, room temperature
  • Cream bouquet (optional)

Filling:

  • 1/2 cup graham crackers, finely crumbled
  • 1/4 cup melted butter
  • 1 cup brown sugar
  • 1 teaspoon cinnamon

Glaze:

  • 1½ cups powdered sugar
  • Small amount of milk, depending on desired thickness
  • Dash of vanilla extract

Instructions

  1. Prepare the Batter:
    1. Preheat your oven to 325°F (163°C).
    2. In a large mixing bowl, cream together the unsalted butter, cream cheese, and sugar until light and fluffy.
    3. Add the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
    4. Mix in the pure vanilla extract (and cream bouquet, if using).
  2. Combine Dry Ingredients:
    1. In a separate bowl, sift together the cake flour, baking powder, and salt.
    2. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  3. Prepare the Filling:
    1. In a small bowl, combine the graham cracker crumbs, melted butter, brown sugar, and cinnamon. Mix until the texture is uniform.
  4. Assemble the Cake:
    1. Pour half of the cake batter into a greased and floured bundt pan.
    2. Dollop half of the graham cracker filling on top of the batter.
    3. Add the remaining cake batter over the filling, then dollop the remaining filling on top.
    4. Use a knife or skewer to gently swirl the filling through the batter, being careful not to scrape the bottom of the pan.
    5. Tap the pan on the counter a few times to release any air bubbles.
  5. Bake:
    1. Place the pan in the preheated oven and bake for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.
    2. Allow the cake to cool in the pan for about 10 minutes before flipping it onto a wire rack to cool completely.
  6. Prepare the Glaze:
    1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the amount of milk to achieve your desired consistency.
  7. Finish the Cake:
    1. Once the cake has completely cooled, drizzle the glaze over the top. Allow the glaze to set before serving.
