Smothered Pork Chops
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons onion powder
- 2 tablespoons garlic powder
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 thin pork chops
- 2 tablespoons bacon fat
- 2 tablespoons olive oil
- 2 cups buttermilk
- Chopped fresh parsley or green onions, for garnish (optional)
Directions:
- In a pie plate, combine the flour, onion powder, garlic powder, red pepper flakes, salt, and black pepper. Dredge the pork chops in the flour mixture, shaking off any excess.
- In a cast iron skillet over medium heat, melt the bacon fat and olive oil together. Carefully place the pork chops in the skillet and fry for about 5 minutes on each side until they are golden brown. Remove the pork chops from the skillet.
- In the same skillet, mix ½ cup of the flour mixture with the buttermilk, stirring well. Pour the mixture into the skillet with the hot fat, stirring constantly. Bring the gravy to a boil, then reduce the heat to low and simmer until it thickens, stirring often.
- Return the pork chops to the skillet, covering them with the gravy. Simmer for an additional 5 minutes or until the pork chops are cooked through.
- Season with additional salt and pepper if desired, and garnish with chopped parsley or green onions before serving.
