Savory Beef Enchilada Casserole

Ingredients:
- 1 pound of ground beef
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1 can (10 ounces) of red enchilada sauce
- 1 can (4 ounces) of diced green chilies, drained
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 8-10 small flour tortillas
- 2 cups of shredded Mexican blend cheese
- Optional garnish: chopped fresh cilantro
- Optional serving: sour cream
Instructions:
Preheat the oven to 375°F (190°C) and generously grease a 9×13 inch baking dish. In a large skillet over medium heat, brown the ground beef until cooked through, using a spoon to break it apart as it cooks. Add the finely chopped onion and minced garlic to the skillet with the cooked ground beef, cooking for an additional 2-3 minutes until the onion is soft and translucent. Stir in the red enchilada sauce, drained diced green chilies, ground cumin, chili powder, salt, and pepper, allowing the mixture to simmer for 5-7 minutes to blend the flavors. Spoon a portion of the beef mixture into the center of each flour tortilla, tightly rolling them up and arranging them seam-side down in the prepared baking dish. Pour any remaining beef mixture over the enchiladas in the baking dish. Evenly sprinkle the shredded Mexican blend cheese over the top of the enchiladas. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly. Remove the foil and bake for an additional 5 minutes or until the cheese is golden brown and slightly crispy on top. Garnish the savory beef enchiladas with chopped fresh cilantro, if desired, and serve hot with sour cream on the side for a delightful finishing touch.
