Ingredients:

  • Cake Base:
    • 6 Eggs
    • A pinch of Salt
    • 80g Sugar
    • 60g Flour
    • 100g Ground Hazelnuts
    • 1 tsp Baking Powder
  • Chocolate Hazelnut Cream:
    • 4 Eggs
    • A pinch of Salt
    • 100g Sugar
    • 120g Cornstarch
    • 1L Milk
    • 200g Butter
    • 200g Chocolate
    • 15g Cocoa
    • 100g Hazelnuts (roasted and chopped)
    • 8g Vanilla Sugar
  • Whipped Cream Topping:
    • 400ml Cream (33% fat)
    • 50g Sugar
    • 300g Cream Cheese

Instructions:

  1. Preheat your oven to 180°C (356°F) and grease a 24x24cm baking pan.
  2. In a bowl, beat eggs with salt and sugar until achieving a fluffy texture.
  3. Gradually fold in flour, ground hazelnuts, and baking powder until well combined.
  4. Pour the batter into the prepared pan and bake for 30 minutes, or until golden brown.
  5. While the cake is baking, prepare the chocolate hazelnut cream.
  6. In a saucepan, whisk together eggs, salt, sugar, and cornstarch until achieving a smooth consistency.
  7. Gradually whisk in milk and cook over medium heat until thickened.
  8. Remove from heat, add butter, chocolate, cocoa, hazelnuts, and vanilla sugar. Stir until achieving a smooth texture.
  9. In a separate bowl, whip cream with sugar until stiff peaks form. Fold in cream cheese.
  10. Once the cake has cooled, spread the chocolate hazelnut cream over the top.
  11. Top with the whipped cream mixture.
  12. Decorate as desired and present this delectable Christmas cake to your loved ones!
