Pineapple Quick Bread
Ingredients:
- 1 ½ cups all-purpose flour
- 2 tsp baking powder
- ⅛ tsp salt
- ½ cup softened butter
- ¼ cup granulated sugar
- 1 cup crushed pineapple, drained (reserve liquid)
- 2 large eggs
- 2 tbsp milk
- ¼ cup pineapple liquid (from crushed pineapple can)
For the Glaze:
- 1 cup confectioners’ sugar
- 2 tbsp pineapple liquid (from crushed pineapple can)
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a medium mixing bowl, sift together the flour, baking powder, and salt for uniformity.
- In a separate bowl, cream together the softened butter and granulated sugar until smooth.
- Add the eggs to the butter-sugar mixture one at a time, mixing well after each addition.
- Gradually add the reserved ¼ cup of pineapple liquid and the sifted dry ingredients to the butter mixture, alternating between them and ensuring thorough incorporation.
- Mix in the milk until well combined.
- Gently fold in the crushed pineapple.
- Transfer the batter into the greased loaf pan, spreading it evenly.
- Bake in the preheated oven for 50-55 minutes or until a skewer inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10-15 minutes, then transfer it to a cooling rack to cool completely.
- In a small bowl, whisk together the ingredients for the glaze until smooth.
