Pampoen Koekies Recipe
Delicious Pampoen Koekies: A Taste of Cape Malay Cuisine
Ingredients:
- 2 cups of self-raising flour
- 1 1/2 – 2 cups of mashed, cooked pumpkin or butternut
- Pinch of salt
- 1 tablespoon of sugar
- 1 large egg, lightly beaten
- 2 tablespoons of melted butter
- 1/2 cup of milk
For frying:
- Cooking oil (for shallow frying)
- Cinnamon sugar (mixture of 2 parts sugar and 1 part fine cinnamon powder)
Instructions:
- Begin by sifting the flour and salt into a mixing bowl, then stir in the sugar until well combined.
- Create a well in the center of the dry ingredients and add the lightly beaten egg, melted butter, mashed pumpkin or butternut, and enough milk to achieve a thick pancake-like batter consistency.
- Heat cooking oil in a large frying pan over medium heat.
- Using a tablespoon, carefully drop portions of the batter into the hot oil, allowing them to fry until golden brown, approximately 3 minutes on each side.
- Once cooked, remove the fritters from the oil and place them on absorbent paper to drain any excess oil.
- While still warm, sprinkle the Pampoen Koekies generously with cinnamon sugar.
- Serve warm and enjoy! This recipe yields about 36 delicious fritters.
