Pampoen Koekies Recipe

Delicious Pampoen Koekies: A Taste of Cape Malay Cuisine

Ingredients:

  • 2 cups of self-raising flour
  • 1 1/2 – 2 cups of mashed, cooked pumpkin or butternut
  • Pinch of salt
  • 1 tablespoon of sugar
  • 1 large egg, lightly beaten
  • 2 tablespoons of melted butter
  • 1/2 cup of milk

For frying:

  • Cooking oil (for shallow frying)
  • Cinnamon sugar (mixture of 2 parts sugar and 1 part fine cinnamon powder)

Instructions:

  1. Begin by sifting the flour and salt into a mixing bowl, then stir in the sugar until well combined.
  2. Create a well in the center of the dry ingredients and add the lightly beaten egg, melted butter, mashed pumpkin or butternut, and enough milk to achieve a thick pancake-like batter consistency.
  3. Heat cooking oil in a large frying pan over medium heat.
  4. Using a tablespoon, carefully drop portions of the batter into the hot oil, allowing them to fry until golden brown, approximately 3 minutes on each side.
  5. Once cooked, remove the fritters from the oil and place them on absorbent paper to drain any excess oil.
  6. While still warm, sprinkle the Pampoen Koekies generously with cinnamon sugar.
  7. Serve warm and enjoy! This recipe yields about 36 delicious fritters.
