Ingredients:

  • 1 package (3 oz) lemon Jell-O
  • 1 cup boiling water
  • 3 cups graham cracker crumbs (1 box), crushed
  • 1 stick (1/2 cup) butter, melted
  • 1 cup cold milk
  • 1 cup whipped cream
  • 1 package (8 oz) cream cheese, softened
  • 1 cup granulated sugar
  • 2 tablespoons lemon juice

Instructions:

1. Prepare the Jell-O:

Dissolve the lemon Jell-O in 1 cup of boiling water. Allow it to cool until it thickens slightly, but is still pourable.

2. Prepare the Crust:

In a 9×13 inch pan, mix the graham cracker crumbs with the melted butter. Press the mixture firmly into the bottom of the pan to form an even layer.

3. Whisk the Milk:

In a large bowl, beat the cold milk until it begins to thicken. Fold in the whipped cream gently.

4. Mix the Filling:

In a separate bowl, beat the cream cheese with the sugar and lemon juice until the mixture is smooth. Gradually add the slightly thickened Jell-O to the cream cheese mixture, mixing gently until well combined.
