Lobster and Shrimp Linguine
Lobster and Shrimp Linguine
Ingredients:
- 8 oz linguine pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound lobster meat, cut into chunks
- 1 cup cherry tomatoes, halved
- 1/2 cup white wine
- 1/4 cup fresh parsley, chopped
- 1 lemon, zest and juice
- Salt and pepper to taste
- Red pepper flakes to taste (optional)
Directions:
- Cook linguine to al dente following package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Sauté garlic for 1 minute.
- Add shrimp and lobster meat, cooking until shrimp are pink and lobster is cooked through (approximately 3-4 minutes per side).
- Add cherry tomatoes and cook until they begin to soften (about 2 minutes).
- Pour in white wine and let simmer for 2 minutes to allow alcohol to evaporate.
- Stir in cooked linguine, parsley, lemon zest, and lemon juice. Season with salt, pepper, and red pepper flakes if desired. Toss well to combine.
- Serve hot, garnished with additional parsley if desired.
