Lobster and Shrimp Linguine

Lobster and Shrimp Linguine

Ingredients:

  • 8 oz linguine pasta
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 pound shrimp, peeled and deveined
  • 1/2 pound lobster meat, cut into chunks
  • 1 cup cherry tomatoes, halved
  • 1/2 cup white wine
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, zest and juice
  • Salt and pepper to taste
  • Red pepper flakes to taste (optional)

Directions:

  1. Cook linguine to al dente following package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Sauté garlic for 1 minute.
  3. Add shrimp and lobster meat, cooking until shrimp are pink and lobster is cooked through (approximately 3-4 minutes per side).
  4. Add cherry tomatoes and cook until they begin to soften (about 2 minutes).
  5. Pour in white wine and let simmer for 2 minutes to allow alcohol to evaporate.
  6. Stir in cooked linguine, parsley, lemon zest, and lemon juice. Season with salt, pepper, and red pepper flakes if desired. Toss well to combine.
  7. Serve hot, garnished with additional parsley if desired.
